Snowball cookies

This recipe is from my mother in-law. These are my husband favorite cookies, well in reality I don’t know if he has a favorite cookie he just has a sweet tooth. Around Christmas time I always make different kinds of cookies and treats, this is one of them that I made this year.

What you will need to make these snowball cookies is

1 cup real butter, softened

1/4 cup sugar

2 cups flour

2 cup chopped walnuts

1-2 cups powder sugar

 


 

If you bought whole walnuts, then you will want to chop them in the food processor. Chop them into little pieces, if they are big chunk it make it hard to roll into balls

Preheat oven to 300 degrees F

First combine the soften butter and sugar, then add the flour and mix until its like crumbs. Add walnuts and mix again, this will still be a crumb like texture.

Take a scoop of the dough and press it together until it holds it shape and then roll into a ball, about one inch. Place on an ungreased cookie sheet.

Bake the cookies for 30-35 min, just until they are done, these cookies you do not want to brown. They will be crisp on the outside but still soft on the inside, the cookies will hard once they cool, so its important not to over cook them. Place 1-2 cups powder sugar in a shallow dish. Have a cookie sheet ready with wax paper on it. I also sprinkled a little powder sugar on the wax paper. The cookies are hot when you roll them into the powder sugar so it give the bottom of the cookies an extra layer, because the sugar melts a little to the cookie.

While the cookies are still hot roll them into the powder sugar, do this gently the cookies are still fragile. Place onto the cookie sheet with wax paper. Once all the cookies are done, go back and roll them for a second time to give them a good coating.
